Step 1 – Chop 2-3 green bell peppers
Step 2 – Slice or Chop 1 white onion. If you’re not obsessed with onions like me then you can use 1/2 the onion and you should chop it not slice it
Step 3 – Heat olive oil in a pan. Add bell peppers and onions. Mix and sautée until both are soft and onions begin to carmelize. Remove vegetable blend from pan. You will use later
Step 4 – Season 2lbs of ground chicken with Salt, black pepper, and red pepper flakes (optional. But I put these on everything). mix season all throughout chicken so it’s evenly distributed
Step 5 – Spray the same pan you used to sautée vegetables with PAM. Add seasoned ground chicken to the pan and cook. Periodically mix up and break apart the chicken as its cooking, it has a tendency to stick together
Step 6 – when the ground chicken is thoroughly cooked, drain all the liquid out. Add the sautéed veggies to the pan and mix the chicken and veggies together. Let it cook for just a few minutes. Everything is already cooked
Step 7 – fill 2 halves of a wheat pita pocket with some of your mixture. Sprinkle mozzarella cheese on top for a healthy clean meal!
